Persian macaroni

Persian macaroni for 4 people.

Ingredients

  • 450g ground beef
  • 400g spaghetti noodles
  • 1 medium onion, diced
  • 1 teaspoon turmeric 1
  • ½ teaspoon saffron- crushed in mortar with pestle
  • 2 teaspoons salt
  • 4 tablespoons vegetable oil
  • ½ teaspoon black pepper
  • 5 tablespoons tomato paste
  • 4 cups of water

Process

  • Pour 2 tablespoons vegetable oil in the preheated skillet and then add chopped onions.
  • Once the onion turns to light brown, add ground beef and mix it very well with onions.
  • Add turmeric, salt and black pepper to the mixture and stir it.
  • Add tomato paste and saffron and stir it until the whole mixture becomes red.
  • Add 1/3 cup water and lower the heat and let cook until the water evaporated.
  • In the meantime, add 3 cups of water with salt in a large pot to boil.
  • Then add spaghetti noodles and 1 tablespoon oil to the pot for at least 10 minutes.
  • Strain spaghetti and set aside.
  • In a separate large pot, add 1 tablespoon oil, a bit of spaghetti and then a layer of ground beef.
  • Keep layering until the meat and spaghetti are finished.
  • Lower the heat and let it cook for 45 minutes.

Notes

  • You may want to use mushroom and bell pepper.
  • The spaghetti noodle is preferred but any kind of spaghetti including Penne and Fettuccine can be used.
