Chicken and Broccoli Take Out Style

Makes about 2 servings.

Ingredients

  • 1 chicken breast
  • 2 cups broccoli florets

Marinade Ingredients

  • 2 tbsp Soy Sauce, Low Sodium
  • 1 tbsp Water
  • 1 tsp Baking Soda
  • 2 tsp Cornstarch

Sauce Ingredients

  • 3 tbsp Soy Sauce, Low Sodium
  • 2 tbsp Sugar
  • 3 cloves Minced Garlic
  • 1 tbsp White Vinegar
  • 1 tbsp Veggie Oil
  • 2 tbsp Water

Process

  • Whisk to combine marinade ingredients in medium bowl
  • Cut chicken against the grain into thinish slices, larger than bite size
  • Place cut chicken into marinade and set aside
  • Add cut broccoli florets and about 3 tbsp water to a medium glass bowl and steam in microwave for 3 minutes
  • Mince Garlic
  • Whisk Sauce ingredients together in small bowl
  • Add a splash or oil to medium/hot pan (forgo the oil if using a nonstick pan)
  • Saute chicken with it’s marinade for around 5 minutes, until golden brown
  • Add the sauce and steamed broccoli to the pan for around 2 minutes
  • Serve over rice

Notes

  • Serve over jasmine or brown rice- I start my rice cooker before I begin to get any ingredients out, so that it is done at the same time.
